Meat and Vegetable Cannelloni

Ingredients for 5 servings:
10 tubes for cannelloni or 10 sheets for lasagna300 grams of ground meat
1 paprika
1 eggplant
1 carrot
1 zucchini
150 grams of mushrooms
Laurel
Pepper
Olive oil
Salt
Preparation:
Cut the vegetables into very small squares or thin strips, whichever you prefer, heat 3 tablespoons of oil in a pan and stir the vegetables, add the mushrooms and bay leaf to flavor the cooking, season with garlic, salt and pepper when taste.When they have softened the vegetables, add the ground meat and mix very well, if necessary rectify with salt and cover the pan so that the meat finishes its cooking, you can add tomato paste and olives if you like. When the meat is ready, remove from heat.
To assemble the cannelloni, if you do not have them ready, you can take the sheet of the pasta (previously soaked until it is soft) put a little of the filling and close the sheet forming a circle with the filling. You can add cheese on top or sauce of the previous mixture to decorate.
