Black Rice with Shrimp
Take a different and healthy dish to your table with this spectacular recipe . It is perfect for special occasions.
Ingredients:
- 300 grams of rice
- 125 grams of crushed tomatoes
- 200 grams of squid
- 100 grams of prawns
- 600 ml of fish stock
- 175 ml of white wine
- Three bags of sepia ink
- Two bell peppers
- A couple of garlic cloves
- A medium onion
- Salt
- Olive oil Virgin
Preparation:
Clean the squid and cut into medium pieces, then peel the prawns and remove the head, the shell and the intestines.Cut the garlic and onion as small as possible to sauté it with a jet of olive oil in a pan or ample paella leaving it over medium heat, after the onion is crystallized we add the crushed tomato, seasoned to taste leaving to cook over medium heat for 10 minutes approx.
Add the squid and ink to the pan, letting everything remain very even; Then we pour the white wine, increasing the heat for 5 minutes to evaporate the alcohol, we lower the heat to medium. To add the rice by stirring it so that it is hydrated, after a few minutes we add the fish broth at room temperature or warm so that it continues to keep the heat in the pan.
We let the broth cook at a high temperature with the rice, and then lower it to medium for about 10 minutes, when the rice is already tender and little broth, add the prawns to cook 5 more minutes, then turn off and let stand for 4 minutes before serving.
