Seafood Paella
This recipe is one of the classics of international cuisine . It has a special charm for any occasion.
INGREDIENTS
(Portion: 4 people)- 400g of rice
- 12 prawns
- 16 mussels
- 12 clams
- 800ml of fish stock
- 1 onion
- 1 green paprika
- ½ red paprika
- 1 large squid
- 1 small can of tomato concentrate
- ½ glass of white wine
- 2 garlic
- 1 parsley branch
- 1 strand of saffron
- Salt
- Olive oil
PREPARATION
First a little oil is poured into a paella pan, the prawns and clams are sauteed, so that the oil takes on flavor, the shellfish is removed from the heat to reserve it.In that same hot oil, the diced squid is fried, until golden brown, removed.
Add the onion, paprika, chopped garlic and parsley, mix everything well, then pour the wine and let it reduce.
When it has evaporated, squid, tomato and saffron strand are added. Leave 2 minutes stirring well and then add the rice.
Wait 2 more minutes without stopping to stir, add the broth and let it boil.
Then the prawns, clams and mussels are very well placed, and the paella is baked at 180ยบ for 15-20 minutes. Let stand outside 5 more minutes and voila.
